PUMPKIN GAZPACHO

Cool, creamy pumpkin is an ideal dish for hot Autumn days. This savory seasonal treat is perfect for the seasonal transition.

INGREDIENTS

1 medium orange bell pepper, seeded and chopped

1 large cucumber, peeled and chopped

1 clove garlic

1 (15 ounce) can of Pumpkin puree

1/2 cup Vegetable stock

1/2 cup Olive oil

3 Tablespoons (T) Red wine vinegar

1 teaspoon (t) salt

1/4 teaspoon (t) dried Rosemary

1/4 teaspoon (t) dried Thyme

1/4 - 1/2 Tablespoon (T) Tabasco, or your favorite hot sauce

Just a hint of Nutmeg and/or Alspice

OPTIONAL GARNISHES

Truffle

Garlic Oil

Croutons

INSTRUCTIONS

1. Place all ingredients for the gazpacho in the blender. 

2. Puree on high speed until completely smooth

3. Refrigerate for at least one hour until chilled

4. Adjust seasoning to taste, if needed

Divide between 4 bowls, and top with garnishes as desired, and enjoy something simply Luscious!

AUTUMN INSPIRATION

"As with most of us, I find inspiration in all the beautiful Autumn colors that surround us at such a magnificent time of year in Ohio. Some of you are already experiencing peak color in the leaves, and those of us close to Lake Erie are still waiting for the big pop as we see some changes to the trees.

​

So what am I telling you that you don't already know?

​

I always say there are 3 rules. Rule #1: There are no rules; Rule #2: Always have fune; Rule number 3: See rules number 1 & 2.

​

Being a caterer, event hostess, and seller of home decor, I would suggest taking advantage of all the root vegetables and luscious flavors that Fall brings to us. With your home, it's time, if you haven't already, brought out the throws, pick up some new pillows for the sofa, loveseat and bed, add a pumpkin spice or some other lovely candle to your bathrooms. Check out our Home Styles Store for some of these products. We're adding new products daily.

 

For the outdoor porch areas, add some pumpkins, cornstocks, and bales of hay to the front porch. You can add in Halloween and Thanksgiving holiday decor, maybe add a magnetic mailbox (we only have one left in the Home Styles Store). Add some twinkly lights, tiki toches, citronella, and firepits with fall cushions, and blankets, and throw in a S'Mores box from Luscious, nibbles and nosh, and you'll be all set to enjoy Autumn!"
